We all remember the important days in our life…weddings, birthdays, promotions, anniversaries, etc. In 10 years, what will you say when someone asks, “How did you celebrate National Cherry Popsicle Day 2011?” With confidence you can answer, “I made cherry-banana popsicles and they were delicious!”

Celebrate National Cherry Popsicle Day, the only way, by stirring up some cherry-banana goodness! With the whip of your wrist and the patience of an icebox, you are just a few hours away from enjoying this delightful summer snack.

National Cherry Popsicle Day

Cherry-Banana Popsicles

I box (4 oz.) of sugar free cherry gelatin
3 bananas
1 tsp lemon juice
1 can of apple cherry juice concentrate
1 c boiling water
1 c cold water
Ice cubes
1 c Heavy whipping cream
1 Tbsp confectioners’ sugar

1. Place cherry gelatin in medium bowl. Add 1 cup boiling water and stir 2 minutes until gelatin is completely dissolved. Add enough ice cubes to 1 cup cold water to make 2 cups cold water. Add to gelatin and stir until ice cubes are completely dissolved.

2. Pour evenly into 16 plastic cups or popsicle mold. Add about 1/4 cup to each cup and freeze for 1 hour.

3. In a large bowl, whip cream until stiff peaks are just about to form. Beat in sugar until peaks form.

4. Slice 3 bananas and add bananas and lemon juice to whip cream.

5. Spoon mixture onto frozen gelatin in cups. Stick plastic spoons or popsicle sticks into center of each cup and freeze for another hour. Top off with juice and freeze for an additional 4 hours or overnight.

6.To remove pops from cups, place bottom of cups under warm running water and press firmly on bottom of cup.

Helping a Hero

Phil Lowe

Thanks to a careful eye, Antonio Diaz Chacon is being praised all over the country for saving a 6-year-old girl from a kidnapper, but one of his biggest praises comes from a local appliance repair business.

It all started with Antonio and his wife, Martha’s broken washer. The couple decided to wash their family’s clothing at Martha’s mother’s home. That turned out to be where police claim the kidnapper took the girl.

Antonio jumped into his truck, followed the kidnapper and rescued the girl after the van crashed. The police said the kidnapper fled.

Thanks to Phil Lowe, owner of Mr. Appliance® of Albuquerque, Antonio won’t have to wash his clothes at his mother-in-law’s much longer. Lowe has granted the family the expert appliance repair they need by repairing any appliance the family needs fixed for free.

“I’m so grateful that Antonio and Martha acted so quickly to save that little girl’s life,” Lowe said. “Our community owes such a huge debt of gratitude for the Chacon’s selfless act of courage. Our very small contribution to this debt is an honor that we give without hesitation.”

Lowe received a call from an anonymous woman in Utah that had seen the Antonio’s story and contacted Mr. Appliance of Albuquerque to see if they had thought about fixing the family’s broken washer. Lowe immediately recognized the great idea and wanted to do what he could to help the family.

“We need to recognize that there are heroes among us which give willingly and with humility without ever asking for anything in return,” Lowe said. “Mr. Appliance of Albuquerque is so proud to help.”
